Driving Flavor Innovation in the Modern Distilling Market: Leveraging Malt, Grain, and Yeast to Create Differentiation

Presented by: Geoff Fischer, Country Malt Group

In today’s distilling market, both craft and large-scale, competition is fierce, consumer preferences are shifting rapidly, and innovation is increasingly tied to flavor differentiation. Distilleries are under pressure to stand out not just with branding but through unique liquid profiles. Raw materials like malt, specialty grains, and yeast strains are no longer just functional; they are becoming core tools for innovation.

In this presentation we will discuss practical strategies for building innovative flavor profiles without compromising efficiency and how choices in malt types, heritage grains, and yeast strains directly influence whiskey, rum, vodka, gin, RTDs, and emerging categories like American Single Malt.
