As long as you have a beta glucanase as a part of your enzyme regiment, you should be fine.

Also is it going to be malted buckwheat or raw?
When we experimented with a buckwheat whiskey it was only about 1/3 of our mash, and the rest was malt so our problems may be a bit different. We treated the buckwheat same as we would corn and that seemed to work well.

Trouble is, I don’t make potato vodka. I am trying to figure out the best practice for mashing. My assumption is I need a hammer mill to break up the potatoes and save my agitator. Is this on point? Is a hammer mill the best option?

I have seen videos of people processing cooked potatoes, but I want to pulverize the raw potatoes as I don’t have a good (non agitator destroying) way to cook that many potatoes.
