Maturation Time in 15 Gallon #4 char

Hello,
I have just begun barreling rum in used 15 gallon rye whiskey barrels. I have been advised to wait 3 months prior to sampling. This I intend to do. What i started with is Blackstrap Molasses mash and barreled it at 105 proof. So…. What are your experiences with this barrel size and time?

Hi Jonathan,
There is really no harm in sampling as frequently as you like, besides lower yields at the end. My experience with rum in used 15 gallon barrels is that they were ideal between 6-9 months in Hawaii’s climate but most were being pulled to finish age in another barrel anyway. 3 months in would be perfectly fine to start sampling but I suspect you’ll really be looking for 9+ months to dump.

Thanks Noah, I’m at over 6 months now and getting some nice oak and a smooth finish at the barrel proof. The first barrel we are going to bottle and the others we are going to age about a year. Cheers.
