Hello,
I have just begun barreling rum in used 15 gallon rye whiskey barrels. I have been advised to wait 3 months prior to sampling. This I intend to do. What i started with is Blackstrap Molasses mash and barreled it at 105 proof. So…. What are your experiences with this barrel size and time? -

Our whiskey aging program is just starting, but I have been playing around with different barrel aging. My biggest question is with naming and with identifying whiskey types. If you use a #1 barrel is that still charred enough to be considered an ok barrel for Bourbon? Does it become a whiskey distilled from bourbon mash? And does that distinction…[Read more]

Hey Molly, Anytime you introduce something that is not considered a cereal grain into your mash bill it becomes a Distilled Spirit Specialty. From my understanding one area that this can get complicated is with sorghum, depending upon which part of the plant you use. Does anyone have experience with naming of “whiskeys” that use alternative grains? In particular, I’ve been looking at recipes that include quinoa and buckwheat, or other pseudocereals, in the grain bill, but I am interested in its legal defintion. Is is still whiskey if it has some pseudocereal but is primarily grain?
