Assistant Distiller – Brooklyn Stillhouse (Red Hook, Brooklyn)

The Opportunity
We’re looking for a hands-on Assistant Distiller to join our production team. You’ll work side-by-side with the Head Distiller supporting distillation, proofing, bottling, and innovation. This is a unique opportunity to learn every aspect of the craft and grow with a team that values curiosity, collaboration, and pride in our work.
What You’ll Do
Production & Distillation
- Assist in daily operations
- Monitor stills, tanks, and equipment to ensure quality and consistency
- Support recipe development, experimental batches, and new product launches
- Keep detailed logs of production data, proofing, and quality control
Bottling & Packaging
- Operate and maintain bottling line
- Prepare and package finished goods for distribution and on-site sales
- Maintain inventory of raw materials, packaging, and finished products
Maintenance & Safety
- Clean and sanitize tanks, lines, and workspaces
- Support preventive maintenance of distillery equipment
- Follow all safety, compliance, and environmental protocols
Quality & Innovation
- Conduct sensory evaluations and QC testing
- Participate in R&D for new products and production improvements
- Help uphold the highest standards of craftsmanship and consistency
Community & Brand
- Occasionally participate in tastings, tours, and events at our distillery bar
- Represent the brand with enthusiasm and professionalism
What We’re Looking For
- Prior experience in brewing, distilling, winemaking, or food/beverage production preferred
- Strong attention to detail and commitment to quality
- Ability to lift 50–75 lbs and work safely around heat, steam, and chemicals
- Self-starter with a collaborative attitude and willingness to learn
- Strong organizational and math skills; basic computer literacy
- Must be 21+ with a valid driver’s license and able to pass a background check
