Hey,
Great idea and it’ll come down to the contract (or lack thereof) that you sign. You may need to negotiate performance waterfalls, “if you sell this much, then we keep going…if not, then we can split ways” kind of language.

We have been playing around with some lower char (level 2), but heavy toast barrels recently. I’ve found that especially when using a smaller size (25 gallons) our spirit develops vanillin & caramel notes sooner when compared to the standard #3. Nevada has been pretty brutal with us enforcing the state interpretation of pressure vessel law. Originally they said they only needed to inspect our steam boiler, but they came back with a pressure vessel definition that included “any vessel that receives energy”, so including steam jacketed, coil containing, cooling jacketed vessels as well.…[Read more]

I see most barrel manufacturers calling char level 3 a standard char. Anyone using lower levels consistently? Finding anything fun?
Seguin Moreau has some really interesting water and heat treatment barrels that we’re going to play with.

As we approach the middle of the year, medium sized distilleries should be on the lookout for eclipsing the first 100,000 proof gallons withdrawn from bond (~50,000 12 Pack Cases). The first 100k PG of domestic withdrawals with the lower FET rate is $2.70/PG. After 100,000 PG withdrawn, the rate is $13.34/PG up to 22.13 mil PG.
