Panelists:
Ryan Christiansen, Caledonia Spirits/Barr Hill (Montpelier, VT)
Stephen Hopkins, Aimsir Distilling (Portland, OR)

Stephen Hopkins and his wife Christine founded The Aimsir Distilling Company in December of 2020.  Their goals were to create a product and environment to bring people together and enjoy each other’s company. Stephen previously was a chemist and always joked he had distilled lots of stuff before but nothing you would ever drink.  Once they started getting serious about forming Aimsir, Stephen attempted some home distilling and would distill a case of Hamm’s as a party trick for his friends.

Stephen and Christine developed their award winning Aitil House Gin by going out and buying every great gin they could find.  Any time a friend would travel Stephen would look up great local gins and ask them to pick up a bottle.  Then they would do blind tasting parties with friends and just listen to what people liked and didn’t like about gin.  From that we pieced together what we wanted to contribute to the Gin community.
Being a part of Aimsir has been one of the best experiences of his life.  He loves the comradery of the team and creating fantastic new products.   Stephen loves when everyone just gets into the super comfortable collaborative mode and lets the ideas flow.  That is when we have come up with our best ideas.
