What?: Whether you’re a seasoned veteran or an industry newbie, you may have heard some recent buzz about a certain molecule: ethyl carbamate. Since the 80’s when it was first discovered in alcoholic beverages, this probable carcinogen has become a growing concern in craft spirits, particularly in the emerging category of American single malt. So what exactly is ethyl carbamate, and where does it come from?

In this webinar we’ll explore the sources of ethyl carbamate, how it gets in our spirits, and what you can do to mitigate it in your own distillery.

Difficulty Level: Intermediate level for production – there is some chemistry knowledge necessary for this webinar, but it will be presented as accessible as possible for a larger audience.

Who?: Rox Tiburolobo is an award-winning brewer and distiller who has spent over a decade in the alcohol production industry. With an education in bioscience microscopy and molecular toxicology, they originally worked in biotech before making the jump to craft brewing and eventually transitioning into a career in distilled spirits production.  While predominantly specializing in whiskey and grain spirits, they have experience in producing a wide range of products from their time in the contract distillation sector. Recently, they joined the Lallemand Biofuels & Distilled Spirits team to provide technical expertise in fermentation and mash house optimization for craft distilleries throughout the West Coast of the United States.
